Did you see the Oprah about veganism? The graphic images of the slaughterhouses reinforced my love of animals and my secret wish that I could actually be vegan. I spent years in my high school and college life as a vegetarian. My now husband, then boyfriend told me he would not live with me unless I ate meat. I started with tuna, then chicken and now enjoy a good steak and burger. That being said I do understand why people are vegetarians and veganism intrigues me because of the amazing amount of energy vegans reportedly have. At this point, I will do anything for energy because coffee doesn’t seem to do it for me.
Life as vegetarian or vegan is not a current reality, but I try to do my part by following Meatless Monday. A normal Monday menu is simple meals like tomato soup and grilled cheese, bean burritos or veggie pizza and salad. I still feel good to know at least one day a week we are meat free. I’ve read statistics about how even this small effort helps animals and our bodies.
I discovered the website Weekly Greens that is filled with healthy recipes and uses a variety of fresh vegetables. The Papperdelle with Broccoli Rabe and Ricotta looks like a meal even my carnivore husband will enjoy.
Here is the recipe I plan to make for this Monday. I already bought all the ingredients I need and will let you know how it turns out.

-1pound broccoli rabe
-2 tablespoons olive oil
-2 large garlic cloves
-3/4 pound pappardelle
-3/4 cup fresh ricotta
-1/2 cup fresh grated Parmesan
-Chocolate (Not in the recipe, but every shopping trip should include a little treat!)
