Vegan & Gluten-Free: Easy and Economical

I just had an aha moment.  I’m at my kitchen island with an assorted variety of gluten-free flours trying to mathematically figure out the right percentage of flour to flour mixture than convert it into grams, then measuring it out on a scale, then placing it in a container thus engulfing my kitchen with flour.  OCD that I am, I would immediately get out the vacuum cleaner and vacuum up the flour that fell to the floor.  The worst part is, after all that, I would not have written down all my flour figures and then I would be lost and be looking at the flour in disbelief.  If g-d had intended me to suffer through this entire math and sceanario, he would have given me said knowledge when in fact math humbles me.   So what is my aha moment? All Purpose Gluten-Free Flour.  Yes, my readers, I am no longer mixing flour, buying a variety of flours, or refrigerating them all and taking up valuable space that can go to storing something else, for instance wine.

With my new powers in hand, I again returned to my love of baking cookies.  No longer am I a slave to flours, I have a new friend.

2 sticks of vegan butter at room temperature.   You may also use margarine.

¾ cup confectioners’ sugar

1 tsp. vanilla extract

2 cups All Purpose Gluten-Free Flour

Optional:  Chocolate chips, Nuts, Seeds or whatever you like!!

In a mixer, beat the butter and sugar until smooth.  Beat in the vanilla extract.

Beat the flour in until all is well mixed, but not over mixing and then add your optional tasty morsel if you wish.

Refrigerate in the bowl for about two hours.  You can roll out the dough and use cookie cutters or simply scoop ¼ cup of dough that is rolled into a cookie shape.

Bake cookies for about 13-15 minutes at 325 degrees F.  Once you see the edges browning they are done.  Once they have coooled off, freeze them (I like the taste much better) or eat them right there and then.
