Spiralized zucchini and squash is big these days. It can be challenging to do yourself and I humbly recommend that most grocery stores offer already spiralized veggies.
I call them noodles and I’m not sure if I fool the kids but then I pile cheese on top and nobody complains.
Spiralized Zucchini with Cheese
1 cup ricotta cheese
1/2 cup Parmesan
1/4 cup chopped basil
1 minced garlic clove
2-3 medium zucchinis spiralized
2 Tablespoons olive oil
salt and pepper
Preheat oven to Broil and set rack to top position. Combine ricotta, Parmesan, basil, garlic and pepper in a bowl. Take about ten pieces of and make a round nest and put on a broiler safe pan. Drizzle with olive oil and salt and pepper. Make a hole in the middle of each nest and spoon in about 2 tablespoons cheese filling. Broil until browned six to eight minutes. Enjoy!
