I’ve found my latest recipe inspiration from the oddest of places. I randomly grabbed a magazine at my grocery checkout line and since making the impulse buy have been cooking the most delicious and easy meals.
Epicurious Weeknight Cookbook is packed with stomach rumbling tips, ideas and recipes and has got me excited to be back in the kitchen. I’ve already made Quick-Marinated Skirt Steak with Sriracha Potatoes and Spinach, Egg Fried Rice and my husband made the Chile-and-Olive-Oil-Fried Egg with Avocado and Sprouts last weekend.
I’ve got a bunch of other pages dog-eared and am especially hopeful about a Grain Bowl with Spiced Chickpeas and Avocado. There is an entire section of 22-minute weeknight dinners that I’m ready to try out.
It is a welcome change to put away my phone or computer (where most of my recipes comes from) and leaf through this portable magazine with my family when meal planning.
