Meatless Monday: Quinoa Apple Salad

Now that I’m living in the suburbs, I’m seeking out all the nearby healthy dining options.  A neighbor recommended True Juice and my adventurous mom agreed to try it with me.  I picked a pre-packed dairy-free tuna salad and she chose a quinoa salad.  We also tried green smoothies and only wished there were more tables outside to enjoy the beautiful fall day.


My mom’s quinoa had apples and chicken and was something I wanted to recreate from the first bite.  I left out the chicken for Meatless Monday, and although not exact, I easily ate the guilt-free leftovers for breakfast the next day.


This filling and crunchy salad is easy to pack for lunch, serve as a side dish for dinner or even enjoy as a snack.

I’m definitely planning to go back to True Juice to try other salads soon.
