I need to eat more salads.  Don’t we all need to eat more salads?

The problem is salads always seem boring and I never think I am in the mood for them.  The thing is though, some salads can be the perfect mix of salty, sweet, crunchy and creamy to create a delicious and healthy meal.

Today I am sharing salad ideas to keep you excited and inspired.

My favorite salad that contains only six ingredients and lettuce isn’t one of them.

This Mexican chopped salad with green goddess dressing is a close runner-up for favorite salad.

Thai cantaloupe salad is unexpected and fresh.

The indulgent roasted potato and beet salad is still packed with vitamins from the good for you beets.

Chickpea, tomato, mozzeralla and pesto salad is a protein-packed main course or side dish.

Classically simple Greek salad.

Perfect for spring: Grilled peach and spinach salad.

A few other salads on my list to make very soon: Blueberry, Avocado, Pecan and Quinoa, Mashed Chickpea and Asian Cucumber Sesame.

Also, how to make your own salad dressing.

Please share your favorite salad combinations in the comment below so we can all be inspired to eat our veggies.
