
The weather is cooling down and it is almost officially soup season. Food & Wine shared this deliciously simple and silky soup by Chicago chef Grant Achatz.
I still cannot believe there is no cream in this bowl. The only ingredients needed are zucchini, garlic, onion, butter, olive oil and vegetable broth. Also, the versatile veggie-packed soup can be served hot or cold and made in advance.
