Meatless Monday: Avocado Toast

I’ve found the perfect meal, I think.  I eat avocado toast for breakfast, lunch, dinner and a snack.  It is easy, can be varied with what you have in the house and always hits the spot!

Even better, avocado toast doesn’t require a recipe; you only need a ripe avocado and any kind of bread.  Here I used the dreaded heels on the bread, as I’m the only one in the house that will eat them.

1. Toast Bread

2. Spread with Vegenaise (or mayo, hummus, pesto or even butter.)

3. Add greens, if available.

4. Mash and spread avocado on top.

5. Salt and pepper

6. Add a splash of hot sauce (or lemon juice works).

7. Enjoy!
