Meatless Monday: Greek Salad

I have a love/hate relationship with salad.  I know it is healthy and filled with nutritious vegetables, but I rarely crave salads.  This simple, yet fresh and tasty salad hits the spot every single time AND my kids eat it.  Yes, you heard that right – my children will eat this salad.  (minus the lettuce, but I still consider it a jackpot!)

A few weeks ago at the Farmer’s Market, I bought potted Romaine lettuce and am using it to make this salad regularly.  I cannot wait until my tomatoes and cucumbers arrive in my garden.

Greek Salad (adapted from Skinny Ms.)

Ingredients

a couple handfuls romaine (or spinach etc)

3 tomatoes diced

1/2 a cucumber sliced and quartered

1/2 purple onion sliced and quartered

a generous handful of feta cheese diced (or crumbled)

lemon

a teaspoon of oregano

1/4 cup olive oil

2 teaspoons red wine vinegar

pinch of salt and pepper

Directions

Mix lettuce, cucumber, tomatoes, onions, feta, lemon zest and oregano.  Combine oil, vinegar, salt and pepper. Before serving stir in dressing.
