My kids will not eat oatmeal and very rarely eat bananas…until now! This breakfast cookie tastes like banana bread and is so simple you will not believe it.
I threw the chocolate chips in to entice my children to eat them, but I think they would have eaten them even without the chocolate! This is also an awesome after school snack.
Banana Oatmeal Breakfast Cookies (adapted from The Rising Spoon)
3 bananas mashed
1 teaspoon cinnamon
1 teaspoons salt
1 tablespoon vanilla extract
1.5 cups oats
1/4 cup shredded coconut
1 handful dark chocolate chips
Preheat oven to 350 degrees. Mix ingredients in bowl. Spoon onto greased pan and cook for 20 minutes. Cool and Enjoy!
