Meatless Monday: Healthy Spinach Artichoke Dip

Last weekend in honor of the snowstorm, Superbowl and husband’s birthday, I attempted to turn one of our favorite comfort foods into a healthier version.

I think I succeeded.

Healthy Spinach And Artichoke Dip



1 can artichoke hearts, chopped

10 ounces frozen spinach

1 cup cashews

2 tablespoons olive oil

1 clove garlic, crushed

1 teaspoon onion powder

1 teaspoon chopped basil

1 teaspoon salt

1 teaspoon black pepper

1/2 teaspoon cayenne pepper

1/2 cup shredded cheese


Add frozen spinach and artichokes to saucepan over medium and head and sprinkle with salt.  Place cashews in Vitamix and grind until becomes a flour.  Next add olive oil and blend until creamy consistency.

Once spinach is thawed and warm, drain water from saucepan and pour into bowl.  Add creamy cashews, seasoning and cheese to bowl and mix.

Serve with crackers, chips or veggies and enjoy!
