I struggle to find snacks for my kids and myself that are filling, satisfying and tasty. They want treats and I want them to eat good-for-you foods.
I believe I finally found an answer to that problem. These protein bars are packed with immunity fighting seeds and nuts, plus natural sweetness from the dates and a few chocolate chips.
After dinner the kids were begging for one of these bars for dessert!
All Natural Protein Bars
1 cup raw almonds
1 cup rolled oats
1/2 cup shredded coconut
12 medjool dates (pits removed)
1/4 cup coconut oil
2 Tablespoons flax meal
2 Tablespoons chia seeds
1 Tablespoon hemp hearts
1/2 tsp almond extract
2 Tablespoons chocolate chips
1/2 tsp sea salt
In a Vitamix (or food processor) combine oats, almonds, coconut, chia, flax, hemp hearts and salt and combine.
Then add coconut oil, almond extract and dates and mix until dough begins to form.
Add water one tablespoon at a time until the mixture comes together. Then add chocolate chips and mix until combines.
Line a baking dish with wax paper. Leave enough paper to stick out the sides and press mixture into dish.
Place dish in fridge to set for at least an hour or over night.
Once set, pull the entire piece of wax paper out and cut into bars.
