I love to grill all year round. It dirties few dishes and even during the cold months, it is nice to escape outside as I prepare dinner.
This summer my husband has perfected grilling corn and we’ve been experimenting with other vegetables.
After one of my readers requested a grilled eggplant recipe I began to explore possibilities and am really excited about this gluten-free pizza I discovered.

Begin by preheating the grill. Slice the eggplant into thin slices. Brush with olive oil and salt. Place on grill for about 5 minutes on one side. Remove from grill and place on tray grill side up. Add sauce cheese and other pizza toppings. Place back on grill for 5 minutes.
Serve and enjoy!
