My kids are my biggest food critics. When they compliment my dinner, especially a salad, I consider it a major success.
This is the first salad that both of them have loved and asked for more.
You can make your own pesto pretty easily, especially if you are growing basil. Otherwise, feel free to buy store bought pesto to make this recipe even simpler. Here is my vegan pesto recipe, or substitute the nutritional yeast for Parmesan to include dairy.
Chickpea, Tomato, Mozzarella and Pesto Salad
1 can chickpeas, drained and rinsed
1 cup grape tomatoes, rinsed and cut in half
1/2 cup fresh mozzarella, cut in bite-size pieces
1/2 cup pesto
salt and pepper
fresh basil (optional for garnish)
Combine chickpeas, tomatoes and mozzarella in bowl. Mix with pesto and add salt and pepper to taste. Garnish with basil.
