Meatless Monday: My New Favorite Salad

If you come to my house this spring, I will be serving this simple brussels sprout salad.  With only six ingredients and limited prep work, this salad is unique, tasty and perfect to accompaniment something heavy at a barbecue or picnic.

Your New Favorite Salad

1 pound brussels sprouts

1/2 cup Parmesan Cheese

1 avocado

1/2 cup dried cranberries

2 tablespoons olive oil

1/2 lemon



Slice brussells sprouts thin, add shredded Parmesan, diced avocado and cranberries and mix.  For the dressing; squeeze lemon into small bowl with olive oil, mix and pour over salad.  Add salt and pepper to taste.

It didn’t take long to become my favorite salad.  I hope you enjoy it too!
