Meatless Monday: Healing Gluten Free and Vegan Miso Noodle Soup

Winter is the season of sick.  It seems everyone has a cold, or had a sore throat or is coming down with a bug.  So far I have been very lucky, but I worry typing this could jinx it all.

This soup  from Goodness Green is filled with good for you garlic, ginger and loads of fresh veggies and is just what you need if you are feeling under the weather.

It doesn’t take long to prepare and is easy if veggies are cut and washed ahead of time.

Healing Gluten Free and Vegan Miso Noodle Soup

You need:

150 grams brown rice noodles
3 teaspoons miso paste
thumb size piece ginger
2 cloves garlic, minced
1/2 red onion, finely sliced
1 carrot, peeled
large handful broccoli florets
6 mushrooms quartered (I used 3 portobello)
handful baby leaf spinach
1 chili, deseeded + finely chopped
2 spring onions, chopped finely

1. Cook the noodles according to packet instructions + set aside. Heat the miso paste over a low heat with 4 cups water + turn off just before it reaches boiling point. Add all the vegetables to the broth.
2. Refresh the noodles with cold water, add to the miso broth + vegetables. Stir well to combine.
3. Serve immediately topped with spring onion and chili.

Healing soup.
