We eat a lot of pizza in our house. It is easy and always pleases every member of my family (which is rare). Some nights I don’t want to hear, “I don’t like (insert dinner here)” after I spent time and energy preparing for my family.
Pizza is one of those foods that can come in thousands of forms. There are super, greasy unhealthy versions, but also are healthy ones made with whole-wheat crust, vegetables and minimal cheese.
Two Peas and Their Pod shared this Sweet Potato Kale Pizza that I planned to make and share with you today. As the sweet potatoes sat on the counter and the pizza dough ready to be rolled chilled in the fridge, my daughter seemed to be melting down from lack of immediate food and my son turned up his nose at the crisp kale next to the yams on the counter.
I did what any tired mom would do; I grabbed some tortillas, spinach, cheese a pan and made quesadillas. I topped with Trader Joe’s salsa.
It wasn’t luxurious, but it tasted good and the kids didn’t notice the spinach tucked inside each crisp bite. I didn’t have to listen to complaints and they weren’t picking vegetables out of their dinner.
Some nights our dinner isn’t worthy of Instagram photos, but everyone goes to bed with their stomach filled. Sometimes the simplest meals are the tastiest.
Spinach and Cheese Quesadillas
Heat greased pan. When warm place tortilla down. Top with spinach then cheese. Finish with tortilla on top. Flip after bottom is brown. Wait a few minutes and place on plate and cut into four piece. Top with salsa or avocado. Serve with beans.
