Red, White and Blue Food

The 4th of July, to me, always epitomizes summer. A hot day watching the parade, barbecuing and always wearing red, white and blue. Even more every year, I think it is worth taking a day to celebrate our independence, country and  troops.

Today’s Meatless Monday features a patriotic dish. When it is really hot and clammy outside, I never have much appetite for heavy food. Strawberries and blueberries immediately came to my mind when I think about red and blue foods.  They are refreshing, juicy and the perfect summer snack.

I couldn’t decide between yogurt and cottage cheese for the white item so I decided to mix the two, which was a great decision.  I used vanilla flavored Greek yogurt combined with cottage cheese and it created the ideal combination of salty and sweet.

Then sprinkled some fresh mint from the garden on top, although my son was quick to point out that mint is not red, white or blue.
