Continuing with my tailgating/football recipe ideas, I recently made this all time favorite salsa. Why buy the store bought kind when you can easily make your own home-made version in little time? Instead of the usual tomato salsa, try a corn and black bean variety. I made this over the weekend . It is so easy to make and I LOVE that you can easily put it in a tupperware and take it with you to any party.
Smoked Black Bean and Corn Salsa
1 can of black beans
1 can of corn
1 can of diced tomatoes
1/2 green pepper, diced
1/2 sweet spanish onion, diced
1 tablespoon smoked chipotle tabasco (adjust quantity depending on heat level you prefer)
1/4 teaspoon of chili powder
1/4 cup italian dressing
Mix all the ingredients in a large bowl. Allow for it to sit in the fridge for at least 4 hrs to get the best flavor. Serve with tortilla chips.
