I’m a big fan of celebrating even the little things. Just because you dont have some sort of birthday, or major event going on doesnt mean you can’t do something a little more unique and special. For example, we’ve all been there…loooong week at work and FINALLY Saturday comes around. There is no better feeling than waking up on a Saturday morning knowing you have two days to enjoy some much deserved R&R (rest and relaxation) and of course throw in some fun with significant others, friends and family. What better way to start the weekend than with an amazing batch of Homemade Waffles. I’m talking about REAL homemade…not the boxed stuff!
The best part is that you can freeze the leftovers and reheat them in your toaster or oven anytime…
Homemade Brown Sugar Cinnamon Raisin Waffles
(for original waffles, omit cinnamon and raisins)
- 2 cups of flour
- 2 eggs
- 2 cups of milk
- 1/4 c vegetable oil
- 1/4 c brown sugar
- 3 tsp baking powder
- 1/4 tsp cinnamon powder
- 1/4 c raisins
- 1/4 tsp salt
- 1 tsp vanilla extract
Heat the waffle iron. In a large bowl and using a mixer, beat eggs until fluffy. Add sugar, flour, milk, oil, baking powder, salt, cinnamon and vanilla and mix until all ingredients are combined.
Spray waffle iron with cooking spray and add mix. Sprinkle with raisins before lowering the top of the waffle iron. Cook until golden brown. Serve with warm maple syrup.
