Chicago Craft Beer Weekend, September 3-5
Oktoberfest!

I spotted another brewer on the horizon: BubbleHouse Brewing Company, a family-owned operation, now has tanks and a sign up on 2121 Ogden Ave., in west suburban Lisle. No opening date has been announced, but everything seems to be trending towards one soon.

The Tribune’s Josh Noel notes that Half Acre is reopening its original Licoln Ave taproom for a few more days in September, before turning the building over the Hop Butcher for the World. The brewery at 4257 N/ Lincoln Ave. closed down in March 2020 due to the pandemic, with customers being served at the new brewery at 2050 W. Balmoral Ave. The Lincoln Ave. outlet will operate Thursdays through Saturdays, until Sept. 25. The beers served will include their flagship Daisy Cutter, brewed at Lincoln Ave. for the first time since its closure, and Space IPA, their first house beer, along with several Hop Butcher collaborations. Phase Three Taproom Anniversary

This Friday, our taproom turns ONE. That’s right, it’s been one full year since we opened our doors up here in Lake Zurich, we’re plannin’ some fun things to celebrate!
Starting with Friday, we will be releasing our collab with our friends Other Half Brewing: All Pixel Everything, and we’ll be featuring some fresh, Other Half hazies in our taproom (more details on this to come)
Also this Friday, we will have Four Star Artisan serving up some delicious chef-crafted sausages from 3-8pm.
Saturday, we’ll be officially releasing a new barrel-aged stout, 1&2, for onsite consumption. 1&2 is a blend of the first two casks we filled with stout here at Phase Three. Aged for 26 months in a Buffalo Trace bourbon barrel (1), and in a Morenos Liquors store pick Widow Jane bourbon barrel (2). This is an extremely small release, and we will only have a limited amount available. We only plan to release this a few times over the next several years. Expect this to sell out very quickly. In addition to 1&2, we will also be opening bottles of Eunoia Batch 5 to enjoy in 5oz pours. We will have food from Que Pasta LLC from 12-5pm, Dark Horse Grill serving pizza from 3-7pm and live music from the Triple Hop Trio from 2-5pm.
Sunday, we’ll also be doing onsite bottles of 1&2 (again, very limited – we’re spacing them out between two days to give everyone a chance this weekend. This means that it honestly will be unlikely to get a bottle for onsite, if you do, please enjoy!). Bottles of E5 will also be popped.

Our latest Imperial Stout to hit OZNR is a reimagining of one of our absolute bangers. Henna: Coconut Double Rainbow is an Imperial Stout with Coconut, Strawberry, Vanilla, & Cocoa Nibs. It started with a super small batch of our beloved Neapolitan stout recipe that we dosed with the perfect amount of coconut to elevate an already insane Henna variant. We then scaled it up on our Villa Park brew system and tried out a new Small Batch Reserve program amongst our Bairal Society members to gain some feedback on the new brew. After some great responses, we made the necessary tweaks and scaled the brew once more to accommodate our large, production-scale brew house in Huntley. What remains is a wonderfully balanced, syrupy stout with a warm, roasty body and all the flavors of everyone’s favorite strawberry, vanilla, and chocolate ice cream PLUS a hefty topping of toasted coconut flakes. (14% ABV)
