
A few days ago, I ran across a couple of food blogs that said you can make soft-serve ice cream out of a banana.
I just had to try the recipe.
What an unbelievable discovery!
That’s right. I actually made a luscious frozen treat you would swear is soft- serve ice cream. It had the luscious taste. The light, creamy texture. Everything. With, of course, the rich taste of fresh banana.
It was, in short, astonishingly good. And made without anything bad in it. I was so thrilled and amazed after trying this stuff, you’d think I’d invented the iPhone.
I made the dessert sans mix-ins. But you could certainly add your favorite healthy or unhealthy treats: mini chocolate chips, peanut butter, walnuts, etc.
You just have to try this recipe. And then tell us about it.
Banana Soft-Serve Ice Cream
2 bananas, sliced and frozen
1/8 to 1/4 cup fat-free milk
Place frozen banana slices in food processor. Pulse a few times to break them up. Then process until they’re an icy consistency. It may take a minute or two. If necessary, open top and press bananas down into bowl.
Replace processor top. While food processor is running, add milk through feedtube and process until you see that the banana now resembles soft-serve ice cream.
Open the processor, spoon the dessert into bowls and eat immediately. Serves two.

Sounds fantastic Judy, I'm pulling out the food processor as soon as I post this comment! Always looking for healthy frozen treats. (But I may have to add some chocolate to this recipe!).
I made it last night with two tablespoons of peanut butter and it was awesome!
