Sundays with Sparky: Arugula, Mango and Avocado Salad with Passion fruit Vinaigrette

Like many people, Friday nights are pizza nights.  We usually make our own (not that I’m averse to take-out, mind you – but since we don’t make crusts from scratch, it really isn’t that much more difficult.)  This past Friday, however, summer suddenly jumped on our roof with both feet and we were sweltering in the heat, so I decided we needed a refreshing salad to go with our pizza.

Fortunately, while it is just barely past spring here, in the tropical parts of the world fruiting trees are producing like crazy.  A refreshing salad using tropical fruit seemed like just the ticket…and you can click through the photo gallery below to see exactly how we did it.

Salad ingredients: One small bag of prewashed baby arugula, one yellow Manila mango, diced, half a large ripe avocado, diced, one slightly underripe passion fruit, about 1/8 cup good olive oil, about 1 tsp red wine vinegar or to taste, salt to taste.
