Meal planning for dummies

Take a look at Pinterest and Instagram and it’s obvious: People like to know what other people are eating.

Meal planning is always one of the highlights of my week. I used to get a TON of magazines for free, so I’ve assembled quite the collection of recipes from O, Cooking Light, Better Homes & Gardens, you name it. I’ve organized them by month so that we’re eating seasonally, and I have a serious problem throwing them away if I haven’t cooked them yet — even thinking to myself, I can eliminate the bacon…and the corn…and the shrimp…and just cook rice with scallions. But that’s another story! Today I wanted to share with you our meal plan for the week as a special Monday post. Just one more thing, a note to parents (like me): My kids don’t always eat what we eat. I offer it to them, but I don’t force it. It’s complicated…but for now we’ll just leave it at that.

Monday: Asparagus Custard Tart (with fruit on the side)

Tuesday: Roasted Chicken Thighs with Tomatoes, Olives and Feta (with fresh pita from the farmer’s market)

Wednesday: Salmon and Spring Onions with Mint-Caper Pesto (with roasted potatoes)

Thursday: Green Pizza with sauce instead of pesto, which my husband can’t eat (fruit on the side)

Friday: Dinner out

Saturday: Farfalle with Sausage, Cannellini Beans and Kale (with fresh bread and fruit)

I found asparagus, tomatoes, olives, cheese, onions, mint, arugula and kale at the farmer’s market Saturday morning and got the remaining items at my local Peapod pickup yesterday. If you still have some planning to do for the week, cook something from my list and we’ll compare notes!

And speaking of notes, I’m sure you’ve noticed that only dinners are listed here. Honestly, we are totally easy-going when it comes to breakfast and lunch. My husband will often have toast and coffee in the morning and we’ll split the dinner leftovers mid-day, filling in here and there with salads (for me) and bacon (for the kids). I do usually add one yummy breakfast dish to the stack for me and a homemade dessert, however, so this week I picked the following:

Lemon Coconut Overnight Oats

and

Giant White-Chocolate Pecan Cookies
