I love a little kick in the flavor when I have beef, poultry or fish. At the Guide’s Inn in Boulder Junction Wisconsin I’ve enjoy blackened steak, walleye and perch. Their blacked seasoning is really good and owner and executive chef Jimmy Dean was kind enough to share his recipe with us.
Jimmy Dean referred to his Blackened Seasoning during a TV show we taped together for Illinois Outdoors TV. He used some of the seasoning on pan fried perch. I have three words for it… Fan Taz Tic. It was great. Here”s his recipe. Enjoy it on wild game, fish, popcorn, or anything else you like where you want to capture true Northwoods flavor.
The Guides Inn Blackened Seasoning
Paprika 1 cup
Lawry’s salt 3/4 cup
Onion powder 1/3 cup
Garlic powder 1/3 cup
Ground red cayenne pepper 1/4 cup
White pepper 1/4 cup
Black pepper 1/4 cup
Ground thyme 1/8 cup
Ground oregano 1/8 cup
Mix well. Enjoy!
