I’ll admit it. I’ve gotten away from my Goop cooking. Many of her recipes are too fussy for weekday afternoons, at least for this lazy housewife. (How’d you like to watch that Bravo show? It’d just be a bunch of doughy ladies in pajama pants, playing Sims and drinking white zinfandel out of a sippy cup while the kids do puzzles on the floor.)
Anyway, I made these almond butter cookies with sea salt from Gwyneth Paltrow’s It’s All Good cookbook a few weeks ago. I really liked them. The kids really liked them. John really, really liked them.
Here’s the ingredient list:
- Gluten-free flour (I think I used garbanzo bean flour, because that’s what I had on hand. Which is your favorite g-free flour for baking?)
- baking powder
- almond butter
- maple syrup
- Maldon sea salt for sprinkling (I had fleur de sel on hand, so I used that)
I think the point of these cookies (at least for Goop) is that they have a crunch to them, but I under cooked them just a little bit because I enjoy a softer cookie. The flavor was really nice.
Even though we’re not a g-free family, I’m enjoying the gluten-free baking. What’s your favorite gluten-free baking recipe?
