It was a rough few months being sick at the start of my pregnancy! If you may recall from my initial story, I had two miscarriages and trouble getting pregnant due to undiagnosed Celiac disease which affected my iron stores and overall ability to maintain a pregnancy. ALAS! Months of acupuncture, herbs and a strict gluten-free diet since November 2015, I became pregnant naturally!
This was a happy relief considering I was being assessed to try other methods if necessary to get pregnant. I just turned 37 years old and felt the clock was ticking…
SO that is my good news and again, I apologize for not keeping up with blogging while I was so sick those first few months! I have a lot to say and have been on a few trips since I found out I was pregnant. Those trips will be the focus of my next few posts!
While I was away, I visited Clearwater, Tampa and St. Petersburg, Florida. I found the MOST amazing 100% gluten-free bakery in St. Petersburg and wish I lived closer! It was like a dream come true! It’s called Craft Kafe: http://www.craftkafe.com/
The quiche was just to die for; here’s a shot. As you can see on the cover shot they also had all you could dream of in either savory or sweet options! 🙂 I had the broccoli and cheddar quiche. The crust was reminiscent of gluten-laden crust that I was used to the first 35 years of my life. I cannot say enough good things about Craft Kafe.
It was also nice that when we got to Florida, I started to feel somewhat better/normal again. I was able to eat fish (without feeling like I could puke at the smell or look of it!). Most of my meals included grilled fish and coleslaw or baked potato to be safe. My favorite was at the Original Crabby Bill’s in Indian Rocks Beach. http://www.crabbybillsirb.com/
All in all, it was a delight to find legit gluten-free options while away in Florida. I cannot wait to get back there next March, with a little 6 month old to enjoy a relaxing, gluten-free vacation!
