I find this recipe useful after I need to talk myself back into healthy eating after I haven’t been so good. The addition of raisins make the greens taste sweeter.
Sauteed Greens with Pine Nuts and Raisins
Prep time: 10 minutes
Cooking time: 10 minutes
1/2 bunch mustard greens
1/2 bunch kale
1/2 bunch dandelion greens
1 TBS olive oil
1/2 tsp sea salt
1/4 cup pine nuts
1/3 cup raisins
What to do:
- Toast pine nuts on a cookie sheet in a 325 degree oven set for five minutes. Set aside
- Wash and chop greens
- Heat olive oil
- Add greens, sea salt and raisins. Stir and cook five minutes
- Turn off heat, add in pine nuts and transfer to serving dish.
Tip: Sprinkle with lemon juice before serving
