It’s that time of year again, where I start to clean out the cellar. Begyle has been releasing some amazing beers over the last few years, so I thought I would dig into a bottle of their Imperial Pajamas from 2018. Another journey with the Cellar Dweller ensues.
The first thing I notice is the very light head retention and almost no lacing on the glass. The second thing I notice from the inaugural sip is hints of subtle cigar smoke. Next up, a beautiful bitterness of java ruminating from the mouth of my tulip.
As it warms there’s a sticky oatmeal flavor welling up, let’s call it malt-o-meal, exposing itself to the salivating jaws lying in wait. Coming out towards the end is a roasted malt flavor that finishes with cool milk chocolate or thin Hershey squares.Begyle didn’t get their Imperial PJs in a bunch, instead, they delivered an incredibly approachable coffee stout that stands up to the hands of fate. There are subtle nuances and positive little changes in flavor that old man time has put upon this stout, and I would say with confidence that this is something you can cellar.
