Yes, I’m excited about that and I don’t care if I’m over sharing.

Speaking of sharing…it’s time to share the Healthy Hump Day links of the week!

First up, Fitness Magazine is looking for women to share their fitness stories to potentially end up on the cover of the magazine. They want to know “What Makes You The Face of Fitness?” Dave Wallach posted about Kate Galliett, a local athlete…go read and go vote.

Ashley Bond, my trainer, also entered…go vote for her!

And, Jen Healy, former Redeye intern and Ultramarathoner has entered…again, go vote!

Last week’s Healthy Hump Day recipe of the week, Quinoa with Basil Pesto, was awesome! Though I’m a little pesto’d out now, having had it 3 days straight. But that’s OK, I’ll give it another week and have it again!

This week’s Healthy Hump Day recipe of the week is…Lettuce-Wrap Tacos with Black Beans and Corn! These look awesome and as they don’t require any cooking, it looks super easy and quick to to put together.


1 cup canned no-salt-added black beans, rinsed and drained
1/2 cup frozen whole-kernel corn, thawed
1 small Italian plum (Roma) tomato, diced
1/2 small avocado, diced
2 tablespoons snipped fresh cilantro
1 tablespoon fresh lemon juice
1/2 teaspoon chili powder
8 Bibb lettuce leaves
1/2 cup shredded low-fat Monterey Jack cheese
1/2 cup salsa (lowest sodium available)

Cooking Instructions

In a small bowl, stir together the beans, corn, tomato, avocado, cilantro, lemon juice, and chili powder.
Spoon 1/4 cup bean mixture into the center of each lettuce cup. Top with the Monterey Jack and salsa. For tacos, fold the sides of the lettuce over the filling. For burritos, roll the lettuce to enclose the filling, tucking the ends in. Secure each burrito with a toothpick.

Yesterday I posted a poll asking if I should shave or keep my beard…so far the results say it stays. A couple of folks commented that they’d donate if I shaved it. I’ll agree to that, only if we up the ante. I’ll shave the beard if folks collectively donate $5,000! Yes, my beard means that much to me. So bring it…tell your friends, donate, and if we hit $5,000, I’ll shave, on video for all to see.
