Rainy Day Eats: Sriracha Tortellini Soup

A gloomy and rainy day always screams one thing in my head when the "Whats for dinner?" question comes about.  In my household, rain equals soup.  What's better on a rainy day than opening the windows and making a batch of soup in comfy clothes.  I guess a glass of wine can always make it better but anyways, back to the soup...


Tonight's soup of choice was a new spin on an old classic, Sriracha Tortellini Soup

Serves 4 people


-1 32 ounce box chicken stock(I prefer low sodium and natural)

-1 12-14 ounce can chicken stock

-2 carrots, peeled

-2 tablespoons garlic

-heaping 1/2 teaspoon black pepper

-20 ounce tortellini of choice(I used frozen spinach and cheese)

-desired parmesan cheese and sriracha

Bring stock, carrots, garlic and pepper to a boil.  Toss in torts and spinach until cooked.  Top with parmesan cheese and desired sriracha swirl.

I love this recipe because by peeling the carrots it speeds up the cook time to next to nothing which makes it ideal for a weeknight dinner.  On top of that, the cheese and sriracha marry together resulting in a tantalizing broth.  Like, tip the bowl back and drink every last drop.  I'm not kidding.
