Garden Gone Wild

Who else has reached the oh shit stage of gardening?  All of my plants are growing like crazy(thank you very much, rain), and I can hardly keep up.  What's a girl to do with an abundance of veggies?

Make chili.

I'm hoping you're like me and the thought of hot food doesn't scare you away in the middle of summer.  Soup is one of the only ways I know of to use up a lot of veggies in one shot, so here we go.

-1 chopped zucchini

-1 chopped summer squash

-1 chopped small onion

-2 chopped peppers of your choice(I used banana and green)

-1 chopped jalapeño

-1 lb. ground turkey

- 1 beer(I used 312)

-1 cup tomato juice(I used Zing Zang bloody mary mix since it's all we had)

-6 large tomatoes(I used 4 red and 2 yellow)

-2 ears of corn - off the cob

-1 can kidney beans

Saute zucchini, squash, onion, and peppers in EVOO until tender and season with salt and pepper.  Brown the ground turkey into the veggies before adding beer and tomato juice.  Simmer for 25-30 minutes and add corn and beans.  Season with chili powder, cumin, cayenne pepper, and paprika to your liking and simmer until the flavors combine.

PS: If you happen to be reading this and now feel completely bummed out that you don't have a garden(due to space), have no fear.  My dad built my sister a garden in one of those blue kiddie pools for her balcony and it's working like a charm.  Give it a try!
