Hey guys! Coming 'atcha with a brand new recipe inspired by a childhood favorite - goulash from the Schwan Man(as we called him). Who's with me?!
This one is for all the meat and pasta lovers out there although the sauce is the real showstopper here. The low-cal cheese gives the sauce a rich taste but without all the extra fat and calories. Sign me up! Feel free to substitute whatever veggies and sausage you have on hand. Ya know what they say, variety is the spice to life. No matter what you throw in, your destined to have a delicious and nutritious(yes, I said it - whatcha gonna do - Burton Crane, anyone??) meal on your hands.
This sauce is just too good. Did I mention it comes together in nearly 20 minutes?
To make this quick and easy dish, simply follow these steps:
- Sauté orange and yellow bell peppers, half of a sweet onion, and a large handful of chopped cauliflower in some EVOO and season with salt, pepper, and crushed red pepper flakes
- Once veggies start to soften, brown sliced chicken sausage(I used Trader Joe's sweet pepper chicken sausage)
- Throw in two large handful of spinach, your favorite jarred pasta sauce, two The Laughing Cow light swiss cheese wedges, and a small handful of parmigiano reggiano
- Serve over whole wheat pasta and enjoy!
And who said you can't have your goulash and eat it too?
