I Can't Believe It's Not Potatoes

Nothing like a Sunday with your parents and soon-to-be husband gathered around your kitchen table chowing down on Great Harvest hot cross buns, eggs to order, and veggies and "potatoes".

I put a healthy spin on my Dad's famed veggies and potatoes and I surprisingly held my own(nothing beats Dad's though).  I guess it doesn't hurt that everyone eating the dish liked the secret ingredient.  Wait for it.......

RUTABAGAS!!  What a great alternative to your typical red or white potato.  Rutabegas are low in sodium and packed with Vitamin C. According to Self's Nutrition Data a red potato has 68 grams of carbohydrates - a rutabaga has 15 grams.  You do the math.  And they taste just as delicious if you do it right.

I started off by chopping, seasoning, tossing in EVOO and roasting the rutabagas at 400 for about 40 minutes(keep an eye on em'). Meanwhile I chopped and sautéed some veggies(just use what you have).  Once the rutabagas are done add them to the veggies to combine and top with cheese.  Enjoy :)
