At the Chicago Bulls game last Saturday night I was very disappointed with the gluten-free selection that Levy Restaurant offered. Fresh fruit cup, salad with chicken, hot dog on a gluten-free bun and nothing in the vegan area. I basically could have ordered that crap anywhere in the stadium and by removing the bun my food would have been gluten-free. Get with the times Levy Restaurant.
Kashi noodles can be vegan and gluten-free. The Kashi package advices to saturate the kashi in one egg and saute it over chicken fat. In the vegan gluten-free world, I sauted the kashi in vegan butter and added the mixture to boiling water with 2 cups of gluten free noodles pre-cooked. Also to add flavor saute a finely minced onion in olive oil and until the onion turns brown. Add to the kashi mixture, ½ tsp. salt and ¼ tsp. black pepper and be ready to wowed.
Lentils are under rated. Cook them according to the package directions and then add 1 cup of sauted onions, green peppers and garlic to the mixture. Over white rice and your eyes closed it taste like Cuban black beans and rice. Or cook the lentils and then add a peanut sauce for a unique and Thai tasting dish. For the peanut sauce: ¾ cup peanut butter with ½ cup of water nuked for 45 seconds. Blend well and then add, ¼ tsp. of ginger and 1 tbsp., 1 tbsp. of tamari, ¼ cup rice wine vinegar, 1 tbsp. agave and a dash of salt. Blend well and add to the lentils.
All the above goes well with a nice glass of wine. But then, so does everything! Stay warm.
