Chocolate Carrot/Zucchini Cake VGF

My son the CPA (yes, I'm bragging) is coming home for dinner tonight (don't keep reading, go to  the next paragraph) asked for ribs (I warned you),  corn pudding (has dairy in it),  baked beans (the ones with bacon) and a chocolate dessert.  My family are carcass eaters.  They will also eat tons of veggies and fruit but they do like the carcass.  Yes, I will make him all his favorites wearing Playtex gloves and gagging, but my baby gets what he wants.

For dessert I am making a chocolate carrot cake, vgf with vgf frosting.  Later on in the season when you have an abundance of zucchini from your garden, feel free to substitute the carrots out and the zucchini in.  Also this recipe calls for ingredients I have around the house but you may substitute as follows:

Instead of Peach Mango Orange Spread (from Costco) use applesauce.

Instead of Strawberry Banana Smoothie (least expensive is at Costco) use orange juice.

Instead of Coconut Oil (I bought a huge container at Costco and I am using it up) use vegan butter.

 

CHOCOLATE CARROT CAKE VEGAN AND GLUTEN-FREE

 

2 1/2 cups all purpose gf flour

1 1/4 tsp. corn starch

1/2 cup dark cocoa powder

1 tbsp. baking powder

1 1/2 tsp. baking soda

1/2 tsp. salt

2 tsps. cinnamon (or more to taste)

3/4 cup unmelted coconut oil

2 cups sugar

4 tbsps. of peach mango orange spread

2 tsps. vanilla extract

2 tbsps. agave honey

2 tbsps. strawberry banana smoothie

2-3 cups shredded carrots

1 cup coconut milk

 

Preheat oven to 350 degrees F.  Spray coat a  13x10 (or around there) pan with coconut oil or whatever you have around the pantry.

Whisk together all the dry ingredients except the sugar. Set aside

Using a mixer blend the wet ingredients together.

Combine all the ingredients together by hand.  You should have a regular cake batter, it should not be thick.  If it is too thick add a bit of coconut milk until you have the consistency of cake batter.

Pour into prepared pan and bake for 25-30 minutes.  This recipe would make great cupcakes or even a bundt cake.  Please adjust the time accordingly.

 

Glaze:  Mix together 1 cup powdered sugar, 2 tbsps. coconut milk and 1 tsp. vanilla extract.  Drizzle on warm cake and serve it with Trader Joe's VGF vanilla ice cream.  OMG moment.
