I CAN'T BELIEVE ITS NOT WHEAT BREAD: VEGAN GLUTEN-FREE REMAKE

I have just baked the tastiest vegan gluten-free (vgf) sandwich bread.  It just came out of the oven, and not wanting to wait I sliced a piece added vegan butter and had a mouth orgasm.   Have I been a vgf person for so long that this has now become my bread and I no longer remember the taste of wheat bread?  Could it be that I no longer feel the urge for massive made bread? Can I now go into a restaurant, knowing that I love my sandwich bread and no longer want the bread basket at the center of the table? No.  I want that bread, but the recipe that follows will help in the cravings department.

I CAN’T BELIEVE ITS NOT WHOLE WHEAT BREAD

2 tbsps. yeast

2 tbsps. sugar

1 ½ cup very warm water

Combine the above and set aside in a warm area

 

9 tbsp. water

3 tbsp. chica seeds

Combine the above and set aside.  This is the vegan egg.

 

In a food processor add:

4 ½ cups of gf flour mix (blog 1 has a homemade recipe or feel free to buy a commercial made gf flour mix.)

1 tsp. salt

1 ½ tsp. olive oil

1 tsp. cider vinegar

2 tbsps. Vanilla

1 tbsp. cinnamon

1 tbsp. turmeric

Chia seed mixture

Proofed yeast mixture

 

Process until the dough is mixed.  Unlike wheat bread, you will not be forming dough and kneading it.  It should have the consistency of thick cake batter.  This will ensure moist bread.  At this time you may add sunflower seeds, poppy seeds, rosemary, nuts or whatever you wish and spin it once more in the food processor.

Place in a well-oiled bread pan and set aside in a warm area (I preheat the oven to warm before I begin the recipe and then I turn off the oven once it is warm).  Wait 30 minutes for the bread to do the first rise.  Open the oven door and lightly push the dough down a bit.  This is not taking the air out of the dough as you would regular dough.  Leave it alone for 30 minutes.

Take bread out of the oven and preheat the oven to 350 degrees F.  Bake bread for 25 minutes.  Remove from oven (knock on the bread and it should sound hollow if it is done.) Let it rest 5 minutes and unmold.
