Most Delicious Vegan Gluten-free, Mish Mosh Cookie

I just got home and I craved a cookie.  I never much crave veggies or an entrée, just cookies.  Not only did I crave a cookie, but I also wanted to bake.   Looking around for what I had on hand, I discovered chocolate chips, oatmeal, peanut butter, and assorted nuts and seeds plus raisins.  Nice thing about being a vegan is you don’t have to worry about not having eggs around.  Everything is an egg; from chia seeds to flax meal to applesauce and white kidney beans, as a vegan, eggs are not a worry.  We are never out of eggs!!  This cookie is delicious.  It has the taste of rich dairy and eggs and I bet you won’t be able to tell the difference!


¼ cup vegan butter

¾ cups each of white and brown sugars

2 tbsps. of chia seeds (or your favorite egg substitute)

6 tbsps. of warm water

1 tsp. vanilla

1 cup peanut butter

3 cups gfv oatmeal

1 ½ tsp. baking soda

½ cup chocolate chips

¼ cup sunflower seeds

¼ cup pecans


In a separate bowl mix the chia seeds and the water, set aside

In a mixer combine the butter and the sugars.   Add the vanilla, chia seed mix, and the peanut butter and combine well.  Then add everything else and combine.

Drop ¼ cup batter onto a greased cookie sheet and place in a preheated 350 degree F oven for 8-10 minutes.  You can get 18 nice size cookies or 36 smaller ones.
