Who isn’t in the mood for cake when a cookie just won’t do? It’s a problem when you are vegan and gluten-free (VGF). You just can’t go to your corner bakery and indulge. Sometimes the grocery stores carry VGF products but they taste stale and not what you are looking for. So what to do? By the way, a cookie will always do. Next blog I’ll share a sugar cookie recipe that is delicious and adding chocolate chips just makes it better.
Cake. It’s very easy. Buy a gluten-free cake mix (Lots of variety at grocery stores) and make it. But it comes out dry and crumbly. My remedy is too add an extra ½ cup of liquid to the liquid requirements on the box directions. Plus when the baked cake comes out of the oven, poke it with holes (a fork works great) and then add lemon glaze to the top until it is all absorbed.
My Mothers’ lemon Glaze
Combine 2 cups of sifted confectioners’ sugar and 1/3 cup lemon juice and heat to a boil. Easy, eh?
