Meatless Monday: Healthy Ramen Noodles

I love ramen noodles.  The kind that got me through college at only .25 cent per meal are very bad for us.  Despite that, I still love warm soup with thin noodles and salty broth.  Luckily, I found a healthier alternative.

Lotus Foods Purple Potato and Brown Rice Ramen with Vegetable Broth uses real ingredients to make an easy, gluten free, reduced sodium and delicious version of ramen noodles.  I like to add an egg and any vegetables I have on hand.

You can make a tasty and healthy meal in less than five minutes.  All you need to do it boil the noodles, add the seasoning packet and anything else you would like to include.
