Meatless Monday: Food Babe's Avocado & Carrot Salad

More and more I've been reading about clean eating programs that help autoimmune diseases, sensory processing disorders, behavior and a general sense of well being for everyone.  The Food Babe does a wonderful job of making our food (and world) healthier and shares this simple recipe that makes eating vegetables enjoyable.

Food Babe's Avocado & Carrot Salad

Ingredients

8-10 carrots, peeled and cute into rounds

2 tablespoons extra virgin olive oil

1/2 teaspoon ground cumin

1/4 teaspoon ground coriander (I didn't have any so left this out)

sea salt

pepper

1 avocado

2 tablespoons fresh lemon juice

1/4 cup chopped cilantro

4 cups mixed greens

Instructions

Heat the oven to 400.  Toss carrots with oil, cumin, coriander, salt and pepper and place on a baking sheet. Bake for 30 minutes until golden brown.  Take out of oven and place carrots in a bowl.

Add avocado, lemon joice and cilantro and toss to combine.  Season with salt and pepper and serve over mixed greens.
