Sweet Potato Muffins

Strep throat sidelined my regular day.  As quick as the doctor's words, I canceled dinner plans scheduled in 2013, subbed out my yoga class and missed another yoga intensive that I was looking forward to.

It's a mom's life and to be honest I kind of needed a day to do nothing.  Well, besides take care of two sickies.

Whenever I'm stuck inside I always bake.  It makes the house smell nice and gives me an excuse to devour something sweet.

Sweet Potato Muffins (Adapted from Its All Good.)

1 large sweet potato

1/2 cup extra virgin olive oil

1/2 cup almond milk

3/4 cup maple syrup

2 cups whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

2 tablespoons cinnamon

1 teaspoon sea salt

Preheat oven to 400 degrees.  Prick sweet potato with fork and bake for an hour until soft.  Set aside and cool.

Peel the sweet potato; discard skin and mash into a bowl with a fork.  Whisk the olive oil, milk, syrup and vanilla in with potato.

In a separate bowl, whisk together flour, baking powder, baking side, cinnamon and salt.

Fold the dry ingredients into the wet ingredients.

Line a 12-cup muffin tin with paper liners and distribute the batter with an ice cream scoop.

Bake 20 minutes, brushing the top with maple strip during the last 5 minutes of baking.
