Meatless Monday: Classic Seven Layer Dip

The best food is the one that brings you to a place of happiness.

I remember parties sitting around the table in my childhood kitchen with four hands digging into the Seven Layer Dip.

Then my college boyfriend, now husband, and I devouring that same dip that his mom made at a campsite in Indiana.

Now my kids do the same.

This dip is simple, always a crowd pleaser and there are ways to make it a little healthier than the version we ate in the 80s.


Seven Layer Dip

1 can vegetarian refried beans

1 packet taco seasoning

1 cups low fat sour cream or plain Greek yogurt

2 avocados mashed

1 cups salsa

1 cups cheddar cheese

1 tomato diced

2 scallions chopped

olives optional

Layer ingredients as follows: bean dip mixed with taco seasoning, sour cream, avocado, salsa, cheese, tomatoes, onions and olives.  Serve with chips and enjoy.
