If there is one unhealthy food that I cannot say no to it is French fries. I never understand how my husband can leave a few fries on his plate without eating them as I can never resist every last greasy morsel.
We all know the tasty fried potatoes are far from healthy or good for us.
Luckily, I've found an almost as good substitute that are packed with vitamins A, B6, C and Iron.
The kids didn't gobble them up quite as quickly as the fast food version, but I was happily content to eat them, without feeling guilty and bloated afterwards.
Sweet Potato Fries
2 or 3 large sweet potatoes
1/4 cup olive oil
1 tsp salt
1 tsp pepper
2 tsp garlic powder
1 tsp paprika
Preheat oven to 450 degrees. Peel and cut sweet potato into long thin pieces. Put the sweet potatoes in a large bowl and add olive oil and spices. Mix well until coated. Spread on single layer on baking sheets. Bake for 25 minutes.
