Meatless Monday: Quinoa Black Bean Sliders

I'm savoring the slow autumn cool down of this month.  Each morning I survey the beauty of our quiet street as I step outside to take the kids to school.  The yellow and orange leaves on the trees, the pumpkins and spooky decorations make me smile day after day.

My closet is ready with sweaters and boots and my appetite is craving hearty, comfort food.

For me burgers are really about the combination of a toasted bun, creamy mustard and the other toppings.  Tomatoes, lettuce, pickles, avocados all over shadow that actual burger in my mind.   You won't feel like anything is missing with this good-for- you black bean burger.

Quinoa Black Bean Sliders

2/3 cup Quinoa

1 cup bread crumbs

2 eggs

1 cup black beans

1/2 cup Parmesan (optional)

1/4 cup chopped chives

1 clove garlic minced

1/2 tsp sea salt

1/4 tsp pepper

1/4 cup extra virgin olive oil

Preheat oven to 350. In medium saucepan, cook the quinoa in boiling water until tender; about 12 minutes. Remove from heat and let sit. In large bowl, whisk eggs, then add black beans, cheese, chives, garlic, salt and pepper. Mix in quinoa and bread crumbs and let sit for 10 minutes.  Then using an ice cream scooper make patties and place on well greased tray.  Cook for 20 minutes or until crisp.
