Meatless Monday: Zucchini Chips

"Mom, I'm the only one who doesn't have chips in my lunch box and that makes me weird."

How do I respond?  Do I run out and buy Frito Lay single serving chips so my boy can be like everyone else?

Or turn to my kitchen at make Zucchini Chips?

Not sure if these will prevent my child from being weird, but I can assure you these chips are hard to resist.


Zucchini Chips

1/4 cup breadcrumbs (I used panko)

1/4 cup Parmesan cheese (optional)

1/8 tsp black pepper

1/2 cup whole wheat flour

1 cup milk (I used almond milk)

1 tsp apple cider vinegar

2 1/2 cups sliced zucchini

Preheat oven to 425 degrees.  In a medium bowl combine breadcrumbs, cheese (if using) and pepper.  In a separate bowl combine flour, milk and vinegar.  Gently stir.  Dip zucchini slices in flour mixture and then dredge in breadcrumb mixture. Place coated zucchini slices on a baking sheet and bake for 30 minutes flipped halfway through cooking.
