Dairy-free banana applesauce muffins

I have lost a few pounds since I cut dairy from my diet mainly because of the lack of cheese in my life.  I still drool over thoughts of pizza or a dinner of Brie and wine, but have managed to stay away from the fanciest of fromage.

Even harder is giving up on most desserts; no matter how much I try my sweet tooth will never go away.

I have been experimenting with baking without butter to satisfy my craving. Applesauce is an easy, nutritional substitute that makes these muffins moist, tasty and best of all my kids approve.

 

Banana Applesauce Muffins

Ingredients:
2 ripe bananas
1/2 cup sugar
1/4 cup applesauce
1 cup white whole wheat flour
1/2 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
1 egg

Preheat oven to 350 degrees. Mash bananas and mix in sugar. Stir in the remaining ingredients, until the flour is just incorporated. Pour batter into prepared muffin tins and bake for approximately twenty minutes.
