Meatless Monday: Watermelon, Tomato, Cucumber, Feta Salad

Every year we host a summer party and every year I have the same goal: to serve summery and easy to eat food that will appeal to kids and adults alike. To me, watermelon is the first food that pops into my head when I think summer.  I envision my 12 year old self, standing barefoot on the dock of Camp Kamaji with sticky juice running down my body as my cabin mates and I spit watermelon seeds in to the lake.

The past two years I've served watermelon slices and tomato mozzarella salad, or caprese for the fancy people.  This year I combined the two recipes to create a delicious, light and refreshing salad.

Here is what you need:

Watermelon cut into cubes

Tomatoes cut into cubes

Cucumbers, peeled and cut into cubes

Feta cheese, either crumbles or cut into small pieces

Fresh basil chopped

Fresh mint chopped

Balsamic vinegar

Olive oil

Salt and pepper

The quantities really can vary depending on your liking.  I used a lot of watermelon, since I had a whole watermelon. I love the combination of sweet and savory and on a hot day it is very satisfying.  The downside is this salad is very watery by the next day, so eat it up while it is fresh.
