One of my goals of Meatless Mondays is to squash the misconception that eating vegetarian is eating bird food. There are hearty veggie-based meals out there.
Today's vegan recipe, Grilled Portobello Sandwich with Caramelized Onions, Capers and Sun-Dried Tomatoes is from Christina Pirello's eye opening cookbook.
A challenge with this meal is that my husband says he does not like sun-dried tomatoes, but I think he does like them, he just doesn't know he likes them. So tonight we will see.
I bought all my ingredients from Stanley's Fruits & Vegetables at North and Elston. Have you been there? If you live in Chicago, you should. I purchased all the ingredients for this dinner, including the bread and some additional strawberries and apples, for less than $20. It is the best quality and priced fruits and vegetables I've found in the city.
This recipe took about forty minutes to make. I began by chopping and sauteing the onions, garlic, tomatoes and capers. Next, I marinated the mushrooms and grilled for about 5 minutes a side. Finally, I grilled the bread and assembled the sandwiches. I chose pretzel bread instead of sourdough as I am on a huge pretzel bread kick. I also spread some hummus and olive oil on the toasted bread as I wondered if it needed the added zest.
It didn't. The hummus was a nice addition and this sandwich was bursting with flavor. There was a substantial kick from the red pepper and the flavors were intense and satisfying.
My husband noticed the sun dried tomatoes immediately. Surprisingly, he ate his entire sandwich. He said later they are okay if they are mixed in something and he can't really taste it. I knew he liked them!
Not surprisingly, my kids wouldn't try this. I'm hoping the more they are around these ingredients, one day they will want to taste and enjoy them.
This is a great meal for a barbeque and will leave you full and satisfied. My husband claimed this was one of the better Meatless Mondays.
