On the 7th Day of Christmas My True Love Gave to Me:  Baked Goat Cheese and Marinara

These are the hectic last few days before Christmas.  These are the days you just don't have time to do everything you want to do, see each friend you want to see, and cook all the food you want to cook.  This dip is the answer.  With a loaf of toasted crunchy bread and a glass or two of your favorite wine, sitting down to this easy dip is a bit of calm in the storm.   Add some fresh fruit or some sausage on the side...No difficult prep, no painful cleanup.  Relax and enjoy!

Baked Goat Cheese and Marinara

Ingredients:

Marinara Sauce

Block or crumbled Goat Cheese

Italian Bread

Olive Oil or butter

  • Slice bread and drizzle with olive oil or lightly spread with butter.  Fry in a skillet until browned.  Or broil, grill or bake until toasted.
  • Spoon your favorite marina sauce into a dish like a pie pan or shallow oven safe dish or if you want to use individual ramekins that is good, too.
  • In the center, crumble the goat cheese.
  • Bake  it in the oven for about 20 minutes or on the grill until warm.  If you are already heating up the grill for dinner then use this as a precursor before a steak or anything you are making.  If you are really in a hurry, it can be microwaved, but it really splatters, so cover it.

Then just dip the toasty Italian bread into this warm dip. If you have fresh basil, then scatter some on top, too... and if you like garlic, rub a cut clove on the toasted bread before dipping.

Simple and satisfying!
